For this reason, Sandra Plevisani, a renowned pastry chef and author of the book “Sandra’s Christmas Recipes” (Editorial Planeta), shares the recipe for the famous salad made from arugula and apples.

Ingredients:

  • 300 g of bacon cut into thick slices
  • 400 gr baby arugula
  • 2 apples peeled and cut into thin slices
  • 1 cup caramelized pecans
  • 200 g of gorgonzola cheese

For the vinaigrette:

  • ¼ cup of apple cider vinegar
  • 2 ½ tablespoons Dijon mustard
  • 2 tablespoons maple honey
  • 1 cup extra virgin olive oil
  • salt and pepper

Preparation:

  1. Preheat oven to 200 ° C (400 ° F)
  2. Bake the bacon, turning it so that it is golden on all sides. Allow to cool, cut into small pieces and set aside.
  3. Mix the arugula, apples, caramelized pecans, gorgonzola cheese and bacon into small pieces in a salad bowl.

For the vinaigrette:

  1. Mix well the vinegar, mustard, maple honey, salt and pepper.
  2. Add the extra virgin olive oil at the end.
  3. Sprinkle the salad with the vinaigrette and serve immediately.
