The caraway, also called cumin of the meadow or carum carvi, is a biannual plant of the coriander family (Apiaceae or umbelíferas) that can reach up to 80 cm.
Its stem is erect, angular, striped and little branched, double or triple pinnate leaves, with linear leaflets, flowers in umbels, formed by between 8 and 16 dense umbelulas that are found at the end of the branches.
The corolla is white or pink, with very cut petals. The fruits are diachenios and are striped on the back.
Harvesting takes place during the second year, at the end of summer, when two thirds of the fruits are already ripe. The cut plants are distributed in bundles, left to dry (there the last fruits have just ripened) and then threshed.
It is grown for its fruits, which are used for culinary purposes. Caraway does not tolerate humidity or heavy clay soils. It is sown in spring, in rows separated from each other by about 40 cm, to a depth of approximately 2 cm. Western European crops are excellent, but the best variety is the Dutch, for its large fruits.
It is one of the oldest plants in Europe, its fruits have been discovered in Neolithic buildings, during archaeological excavations. Caraway is also cultivated anciently in Asia. Dioscorides recommended it against them stomach painsand in the Middle Ages it was customary to drink candied caraway.

Caraway acts on the digestive system, fights swelling, flatulence or gas and colic, especially in children. It also facilitates the digestions and eliminate intestinal parasites.
It also calms smooth muscle cramps and regulates painful menstruation. In women, caraway also has stimulating properties of the milk secretion.
Caraway Remedy for Flatulence or Gas #1: Pour 1/2 teaspoon of caraway powder (obtenido de machacar sus frutos) into a cup of boiling water. Cover and let cool. Strain and take a cup after each meal.

Steaks with caraway and cherry
1 tablespoon of coarsely ground black peppercorns
2 teaspoons of caraway seeds
4 lean loin steaks (100 g each)
1 tablespoon of olive oil
1 medium purple onion finely chopped
1 cup dry red wine
1 kg of coarsely chopped cherries

In a deep bowl mix the pepper and caraway seeds and salt. Dip the steaks in the mixture, pressing them through both sides.
In a large non-stick pan, heat the oil over medium heat. Add the steaks and cook for 3 minutes per side so that they are medium-rare. Transfer the steaks to a plate and keep warm.
Add the onion to the pan and sauté for 4 minutes or until tender. Add the wine, turn up the heat and cook for 2 minutes. Mix, stirring, the cherries, mustard, vinegar, salt and ginger; cook for 5 minutes or until the waxes are very tender.
Return the steaks to the pan and cook for 1 minute per side until heated through. Serve the steaks on 4 plates. Put the parsley in the sauce, stir it and put it on top of the steaks.

Caraway brings a point of balance to the dominant flavor of paprika in this typical Hungarian dish and the combination of both species gives rise to the unmistakable flavor of goulash. 2 cups onion, sliced

Avoid excessive consumption of caraway seeds as they cause (although it seems contradictory) belch frequent that can be annoying.
